Peanut Butter Thumbprint Cookies

Who doesn't love peanut butter and chocolate!? These cookies combine the two flavors perfectly!

Ingredients

For the Cookies

  • 1/2 cup unsalted butter !114 grams)
  • 1/2 cup granulated sugar (99 grams)
  • 1/2 cup light brown sugar (109 grams)
  • 1/3 cup peanut butter (83 grams)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour (188 grams)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar, for rolling (50 grams)

For the Filling

  • 3/4 cup peanut butter (188 grams)
  • 1/2 cup confectioners' sugar (60 grams)
  • 1/3 cup milk (83 mL)

For the Topping

  • 1/2 cup milk chocolate chips (88 grams)

Instructions

For the Cookies

  • In medium bowl, cream together butter, granulated sugar, and brown sugar.
  • Mix in egg, peanut butter, and vanilla extract.
  • In separate bowl, whisk together flour, salt, and baking powder.
  • Combine dry ingredients with wet ingredients. Mix until combined.
  • Form dough into 1 tablespoon size balls and roll in sugar. Place on parchment lined baking sheet.
  • Bake at 350 degrees for 13 minutes.
  • Remove cookies from oven and immediately make an indention in the center of each cookie using a teaspoon.

For the Filling

  • Mix together peanut butter, powdered sugar, and milk until combined.
  • Once cookies have cooled, fill each cookie with peanut butter filling.

For the Topping

  • Heat chocolate chips in microwave for about 15 seconds at a time until melted. Use a spoon to drizzle chocolate on top of each cookie.
