Eggnog Cake

I love some eggnog during Christmas time and this cake has a full cup of the stuff in it. It's the epitome of Christmas on your plate.

  • 1 cup unsalted butter (227 grams)
  • 1 1/2 cup brown sugar (327 grams)
  • 3/4 cup granulated sugar (149 grams)
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract
  • 4 eggs
  • 1 cup eggnog (240 grams)
  • 3 3/4 cup all-purpose flour (470 grams)
  • 1 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt

For the Frosting

  • 8 oz cream cheese, softened
  • 4 cups powdered sugar (480 grams)
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • 3 tbsp eggnog
  • 1/2 tsp rum extract


For the Cake

  • Preheat oven to 325 degrees. Butter two 9-inch round pans and line the bottoms with parchment paper circles.
  • Use a mixer to cream together butter, brown sugar, and granulated sugar for about 4-5 minutes.
  • Add in nutmeg, cinnamon, vanilla extract, rum extract, and eggs. Mix until combined.
  • In separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • With mixer on low speed, add flour mixture in three parts and eggnog in two parts alternating, beginning and ending with the flour mixture. Scrape bowl to ensure all ingredients are combined.
  • Evenly pour batter into prepared pans. Bake at 325 degrees for approximately 65 to 70 minutes. Allow to cool before removing from pans.

For the Frosting

  • In a mixer, cream together cream cheese and powdered sugar.
  • Add in remaining ingredients and mix until fully combined.

To Assemble

  • Once cakes have cooled, remove them from pans and remove parchment paper.
  • Place one cake on cardboard round and fill in the top with frosting. Stack the second cake and top and ice the rest of the cake until fully frosted.
  • Sprinkle cinnamon on top of cake, if desired.
