Brown Butter Peach Crumb Bars

For the Crust and Topping

  • 2 1/4 cups all-purpose flour (282 grams)
  • 1/3 cup granulated sugar (66 grams)
  • 1/3 cup light brown sugar (73 grams)
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, beaten
  • 3/4 cup unsalted butter, browned (170 grams)
  • 1 tsp vanilla extract

For the Filling

  • 3 cups peaches, peeled and chopped
  • 1 tbsp lemon juice
  • 1/4 cup unsalted butter, browned (57 grams)
  • 1/4 tsp cinnamon
  • 1/2 cup all-purpose flour (63 grams)
  • 3/4 cup granulated sugar (90 grams)


To Brown the Butter

  • Melt butter in a saucepan over medium heat.
  • While stirring, continue to heat the butter until the milk solids become a golden brown color, around 3 minutes.
  • Remove from heat and immediately transfer a separate owl.

For the Crust and Topping

  • Preheat over to 375 degrees. Butter a 9 inch square pan.
  • Combine the first five dry ingredients in a medium-size bowl.
  • Add beaten egg, 3/4 cup of the browned butter, and vanilla extract. Mix until combined. The mixture will be crumbly.
  • Spoon half of the mixture into buttered pan and use fingers to press into the pan. Set aside other half of mixture.
  • Bake crust for 10 minutes and allow to cool.

For the Filling

  • Combine peaches, lemon juice, remaining brown butter, cinnamon, flour, and sugar in a medium saucepan.
  • Heat mixture over medium heat continuously stirring until sugar has melted.

To Assemble and Bake

  • Transfer filling mixture to pan and spread evenly on prebaked and cooled crust.
  • Sprinkle remaining crust mixture on top of filling mixture.
  • Bake at 375 degrees for 35 minutes.
  • Allow bars to cool before slicing.
