Who doesn’t love peanut butter and chocolate!? These peanut butter thumbprint cookies combine the two flavors perfectly!
I love a good peanut butter and chocolate combo! These chocolate peanut butter thumbprint cookies are an old fashioned peanut butter cookie with a peanut butter filling and milk chocolate drizzle topping. I baked these last weekend for hub’s and my movie night snack. He loves peanut butter so, obviously, these were a definite hit!
These start with a regular peanut butter cookie. The dough is formed into balls, rolled in sugar, and then baked. Instead of flattening the cookies with a fork before baking, for these, I use a teaspoon or regular spoon to create a small indention in the center of the cookie as soon as they come out of the oven. This creates a place for the filling to go and creates the nice little cracks on the edges of the cookie. You can make the indention on each cookie as shallow or as deep as you want it depending on how much filling you want in your cookies.
Peanut butter, powdered sugar, and milk are combined to make the filling. It comes out tasting just like the delicious filling in Reese’s peanut butter cups! Yum!
Finally, the cookies are topped with a milk chocolate drizzle! You could use a pastry bag to help with evenly drizzling the chocolate or you can do what I did and use a spoon. I like the big chunks of chocolate I get when using a spoon to do the drizzle. Either way, drizzle those cookies, y’all!
